You all know I am not a coffee drinker. Then Leslie Coffee in Wichita opened up and introduced me to what a lavender latte is. I was meh about it until I went in one day and they said it was gone. GONE. The lavender season was over. Not to be dramatic, but I was pissed. I talked about it for months. Then spring rolled around and COVID hit and I realized I wanted to make my own iced lavender latte recipe. I’m not one to coffee shame but I realized I simply cannot spend $5-$7 on these when I could just learn to make them at home. (Don’t worry Leslie, you know you still see me for my Sunday pick-up avocado toast and ORIGINAL late lavender latte.)
A couple of things about this no equipment recipe. A coworker of mine used to manage a Starbucks so she helped me get a basic understanding of how to do this. She also made it known there is NO SHAME IN INSTANT ESPRESSO! Do you hear that? NONE! No shame! I do two shots of espresso in mine but I have done up to three when I really need it. Cafe Bustello is good (I’m not an expert) and it gets the job done and NO EQUIPMENT IS NEEDED! Just warm/hot water from the faucet and let it dissolve for about 30 seconds.
Additionally, you can just straight buy lavender syrup if you don’t want to make it. Torani is the standard and what you would find from a place like Scooters (Maybe this is a Midwest thing?) If you want to make your own lavender simple syrup it’s super simple.

Ingredients
- 4 TBSP Dried Culinary Lavender
- 1/3 Cup Sugar
- 2 TBSP Honey
- 1 1/2 Cup Water
Instructions
- Bring water to boil and add lavender buds. Boil (almost simmer) for five minutes.
- Reduce heat and slowly add in sugar while stirring to dissolve. Add honey and stir in. Simmer for five minutes. Remove from heat and cool for an hour.
- Strain the mixture to remove the lavender buds. Store in an air-tight glass container.
- Typically keeps for up to two weeks.
Lavender Latte Recipe
All of this can be adjusted to your taste level!
- 2 TBSP Lavender Syrup
- 4 Ounces Cafe Bustello (1 TSP to every two ounces of water so 4 TOTAL ounces)
- 8 Ounces skim milk
- Ice
Directions: Dissolve Cafe Bustello in hot water and pour in cup. Add lavender syrup. Top with milk (I go by color, not ounces but I know nothing about coffee other than it works for me when I do it this way.) and add ice!
