These 4 ingredient breakfast cookies are what I live off of in WFH mode. They are dumb easy and you can add or subtract pretty much any of the mix-ins. I make a batch on Sunday (eat a few warm) and then my breakfast is ready to go for a few days!
Jump to RecipeThe key to making these better than *all the rest* of those other 4 ingredient breakfast cookie recipes? These sea salt flakes. I cannot tell you how much of an impact they make. You just have to taste for yourself. They are also just plain fun to sprinkle. I feel like Salt Bae. I can’t make it rain money but I can bougee salt flakes.
Please do not be afraid of salt in sweet recipes. Salt enhances the sweet flavor. Only if you go massively out of proportion do you end up with that overly salty taste in a recipe meant to only be sweet. Whatever base flavors are there, in proportion, salt is going to enhance them.
If you want to make these gluten free, just swap regular oat meal for gluten-free! Easy-peasy and still will taste great.
Because there is banana in this recipe, you do want to eat them fresh. Not a challenge when they taste this good. They are perfect for adding to a lunchbox (for kids and adults) or taking in the car. Not that I have popped them when driving to the dog park early in the morning. Not at all.
If you notice them starting to turn brown, that’s just the banana. No need to freak out you have managed to grow mold.
We all have some extra time at home now, make these on Sunday and eat them while watching the one millionth re-run of The Office or Golden Girls. Whatever your comfort TV show is. 4 ingredient breakfast cookies will compliment it and not judge you for laying on your couch all day.

- 2 very ripe bananas (think banana bread ready)
- 1 cup old fashioned oats
- 1 cup chocolate chips
- 1/3 cup of smooth peanut butter
- Optional: Maldon sea salt flakes, chia seeds, anything you want, etc.
- Ideas for add-ins: Chia seeds, flax, etc.
